Pale gold color. Rich and toasty complex aromas of green apples and pears. The Bollinger style is very round and mature with a luxurious finish.

Bollinger's non-vintage Special Cuve is for me consistently one of the very best under-$50 Champagnes in the world. It contains reserve wines up to 15 years old, and is always aged by Bollinger for three to four years before it's released. It is very dry, full-bodied, and biscuity, with complex flavors of brioche and green apples. It becomes even toastier with a few years of aging.
Had a dinner party and kicked the evening off with Bollinger. On a tip from my chef friend, I served Kettle potato chips with the champagne - the salt on the chips was a perfect compliment to this delicious bubbly. My friends loved the unexpected pairing and so we opened bottle # 2.
