Fermentation: Vinification in closed concrete vats. Grapes are destemmed, vatting lasts for about 3 weeks.
 
Production Notes: This vineyard, a traditional "lieu-dit," has long been a mainstay for the sourcing of the wine of Chapoutier's La Bernardine proprietary wine, and now that its vines have matured to a minimally-yielding level (15 HL/HA), it is capable of great wine on its own. About half the age of Barbe Rac, and a bit lower in elevation, its spicy nose and deep red-fruit flavors make a distinctive statement of dense Grenache intensity. An immediate hit in its first vintage, 1998, it will continue to make waves as the vines show further maturity.

The 2006 Chteauneuf-du-Pape Croix de Bois shows intense cedary incense and Provencal herb notes mixed with ground pepper in a sexy, hedonistic style with plump, full-bodied, soft black cherry fruit, licorice, and spice. It is a very aromatic style without the density and weight of its sibling in 2005, but it is gorgeously pure and very seductive. Drink it over the next 10-15 years.

Reveals an intense Provencal herb character as well as peppery, roasted meat, garrigue, and kirsch liqueur notes, full body, good richness and a long finish. Yields for this offering (made from 100+-year-old Grenache vines in the Galets Roulets area) are typically less than .5 tons of fruit per acre."

Very pure and driven, with a great beam of macerated red currant fruit laced with licorice, raspberry, bittersweet cocoa and incense notes that extend through the long, mouthwatering finish. Very rich, but offers admirable precision. Drink now through 2022.

The 2005 Chteauneuf-du-Pape Croix de Bois is brilliant. Notes of licorice, seaweed, cedar, and copious black currant and sweet cherry notes are present in the provocative aromatics. Ripe, full-bodied, and dense, with moderately high tannin, terrific concentration, and a deep ruby color, this is a brilliant wine that tips the scales at 16.5% natural alcohol, whereas the 2006 was at 15.3%. Look for the 2005 to hit its peak in 2-3 years and last for 15 or more years.

The 2005 Chteauneuf-du-Pape Croix de Bois possesses aromas and flavors of incense, kirsch liqueur, garrigue, spice, plums, and black cherry jam. Full body and abundant alcohol suggest it will benefit from 2-3 years of bottle age, and drink well for 10-15+."
