Dark red with a purple hue. Classic Stags Leap District aromatic profile with layers of blackberry, blueberry, black currant and highlighted with vanilla, coffee bean and dark chocolate. The velvet palate is back with the elegant tannins that Elevage is known for. Round and pleasant with no hard edges this wine has beautiful fruit on delivery with a luscious mid-palate and a long finish.

Less jammy and forward than the '04 Elevage, but more closed and tannic than the winery's regular 2005 Cabernet, this Bordeaux blend really needs time to show its stuff. It has obviously deep and impressive currant and blackberry flavors, but the tannins are significant. Hold until at least 2010. Cellar Selection.

Garnet hue that hugs the glass. Warm, full aromas of cherries jubilee, glove leather and maple. Layers of cherry and plum fruit with youthful wood tannins. Dry finish with age-worthy fruit that needs to shed some of the aggressive tannic structure.

This has the rich, black-soil character of fine Stags Leap District cabernet, the lovely texture firmed up by mineral tannins. Dark black cherry flavors last with those tannins. This should be at its best six to eight years from the vintage.

This Bordeaux-style blend is complex, mingling cherry, blackberry and cassis fruit with notes of violets, dried spices and black olives. It's full-bodied and supple, with rich, fine tannins that taper off gently on the finish.

This feels complete and classical in tone, an elegant red that carries its ripeness well. A blend of merlot, cabernet sauvignon, petit verdot and cabernet franc, it develops complex flavors from the balance of tart fruit and gentle dark-roast coffee tannins. Its smoky meatiness makes it feel accessible now, though it's balanced to develop over six to eight years in the cellar. When you do open it, try a bottle with lamb roasted with crushed peppercorns.

If Tchelistcheff were still here, he might describe this Cab as an iron fist in a velvet glove. It's inviting in rich cassis, blueberry and chocolate flavors, with a soft mouthfeel. But the softness is deceptive; this is a big, deeply structured wine. Drink now through 2012. Cellar Selection.

Wonderful harmony and finesse, with a supple texture that lets the ripe currant, plum and black cherry flavors glide smoothly across the palate. Elegantly styled, it shows more grace and delicacy than most Merlots, and it goes down easy. Drink now through 2008.

Very seductive, with an aromatic mix of mocha and vanilla, ripe currant, cookie dough and spicy scents. Full bodied and supple in texture, ending with firm tannins and nice dash of espresso. Merlot, Cabernet Sauvignon and Cabernet Franc.
