This is assyrtiko in the extreme, wild with acidity, think with mineral, as dry and solid as a stone. Even as a Bartlett pear juiciness begins to emerge, the acidity never loses hold. Fry up a basket full of calamari or steam a pound of fat mussles: this wine will plow through it all. Not imported.
