Aged in new oak barrels (about 35%) as well as in barrels of one or two years. After 12 – 15 months, the barrels are blended together just before the bottling.
After a manual harvest, a long and progressive pressing allows winemakers to select only the richest of the juices. The static racking, which lasts for 12 hours, helps to clarify the must which is directly put into the oak barrels for further alcoholic fermentation.

This Monopole, or proprietary wine, is produced from well-drained gravelly soils of hard limestone, which contribute to its intensity and minerality. Full, well balanced and round. There is a nice length in mouth brought by the minerality of the terroir.
