Overview

Farmed since 1844, Maxville strives to uphold the promise of the land by creating the highest quality wines without compromise. Maxville’s Sauvignon Blanc is estate bottled. Lush, bright, and decadent on the palate with a long, clean finish. Pair this wine with mild white fish and soft cheeses.

Aging

The components were aged sur lees for 8-months before blending and bottling. The final blend is 60% stainless steel, 30% barrel, and 10% concrete, it is this manifold regimen that is responsible for the complexity of the wine.

Fermentation

This Sauvignon Blanc was harvested in two separate picks, the first pick was pressed whole cluster and split between stainless steel and neutral French oak barrels for fermentation. The second pick was crushed to tank and allowed to macerate over-night. Once pressed the must went into a stainless steel tank, a concrete tank, and neutral French oak, new French oak and new French acacia barrels.
