Aged in French oak barrels, 50% new, in our underground wine caves for 22 months.
Each vineyard block is vinified separately. Like the traditional method in Bordeaux, the wines are assessed in January with final blending done in March.

This wine is full-bodied, rich, has intense and delicious flavors, and has the most structure and deepest color of all the Peak wines. Complex, with a mix of spice, loamy earth, dried herb and berry accompanied by a touch of sage and chicory, ending with a drying aftertaste.
