The year printed on the label is the year in which the grapes were harvested, also called the vintage. Some wines should be drunk while young, like Sauvignon Blanc or Merlot. Others, like a Cabernet Sauvignon or Syrah, can be aged. A wine labeled, NV or Non-Vintage, is a blend of multiple vintages. This is done to control flavor.
