Green vegetables are generally fairly bitter. Because of this, white wine is generally a better pair. Opt for a light-bodied white wine like a Sauvignon Blanc or Pinot Grigio. Avoid artichoke and raw asparagus as neither generally pair well with wine.
Earthy mushrooms will pair nicely with a full-bodied wine, like a Chardonnay or Syrah, as well as with a Rosé. Experiment with different types of mushrooms and wine pairings to find what you like best.
