What is Wine?
Whether it is a $15 table wine or $300 collectible,at its most basic level all wine is fermentedgrape juice.
The wine grape
There are over 10,000 varietals of grapes used to make wine. Nearly all varietals used in wine production are the same species - Vitis vinifera.
Grape + Yeast
Grapes are crushed or pressed. The resultant liquid, known as 'must', is combined with yeasts.
During fermentation, yeasts consume sugar in the must and produce alcohol, carbon dioxide, and heat energy. A wine is "dry" when yeast consumes all the sugar.
Aging adds aromas and flavors to wines not found in grapes or yeasts. For example, aging wine in a new oak barrel before bottling will add tannin. High tannin removes proteins from your tongue, making it a classic pairing for fatty meats.
