Kept on fine lees for 3-6 months before racking.
Grapes are hand-harvested between February and March. Each block was vinified separately, crushed, and gently pressed. Fermentation took place in stainless steel tanks over two weeks at 55°-59°F. 10% of the portion was oaked.
