18 months in 50% new French oak barrels.
Meticulously hand sor ted. Whole bunches placed in concrete vats and fer mented with native yeasts. Three weeks of fer mentation in open-top vats with regular intervals of pigeagefollowed by oak barriqueaging. All wines are racked and bottled without fining and filtering.
