Cabernet Sauvignon is the most abundant varietal at Ernie Els Winery. With five distinctive clones planted on the property, they’re able to show a bold wine displaying the profile and characteristics which make the Helderberg truly magnificent. Hints of dried herbs and beef add complexity and lure to the finely textured, fruit coated tannins.
Aged for 17 months in 300 litre French Oak barrels, 20% new.
Fermentation took place in 7-ton, open-top stainless steel tanks. The wines were pumped-over and punched-down manually 3-5 times per day ensuring maximum color extraction from the skins. Maceration period was 10-16 days before pressing.
