Overview
Guardian Peak wines are meant to complement an active lifestyle and to be enjoyed anytime, anywhere. The fresh red fruit and hints of ripe dark fruit flavors are backed up by the blueberries from the nose and a toasty, hazelnut character. This well integrated wine has a full mouthfeel, a rich juicy mid-palate and a fantastic, balanced finish.
Aging
Maturation occurred in 2nd and 3rd fill 300 litre French and American oak for 10 months.
Fermentation
The wine was fermented at 28у in a combination of open (punch down) and closed fermenters (pump over) for 7 to 14 days. Punch downs and pump overs occurred 5 times a day.
