Guardian Peak Wines, created by South African wine visionary Jean Engelbrecht, are a series of red wines affordable in both style and price. These wines are produced predominantly from estate owned vineyards in the Stellenbosch region, and the name is as unique as the wines! Guardian Peak is the highest peak in the Stellenbosch mountain range which overlooks the winery vineyards. These wines are meant to complement an active lifestyle and to be enjoyed anytime, anywhere. The Merlot contains soft fruit flavors, which deliver a juicy and highly accessible wine. The dark mulberry and plum notes are prominent on the palate. There is a mocha undertone that is in beautiful balance with the subtle oak characteristic. This wine shows a fantastic mid-palate weight, and a rounded elegant finish. Smooth and inviting, this wine is most rewarding when enjoyed early with good food.
Aging
Maturation took place in second and third fill 300 litreFrench and American oak for 10 months.
Fermentation
The wine is fermented at 28у in a combination of open (punch down) and closed fermenters(pump over) for 7 to 14 days. Punch downs and pump oversoccurred 5 times a day.
