Châteauneuf-du-Pape is perfectly suited for low-yielding Grenache plantings, hence the reason Chapoutier works heavily with this varietal. With this unique approach and the low-yield of his vineyards, Chapoutier produces a rich, flavorful wine with moderate tannins. This wine exudes flavors of ripe red fruits with hints of spice and licorice.
Maturation between 12 and 15 months; most of the wine remains in concrete for aging, but a small percentage is aged in new oak barrels.
Vinification is carried out in the traditional way in concrete tanks for about three weeks with a high temperature to ensure an optimal extraction of the color and tannins.
