Only 500 cases are produced annually of this cuvée. Les Varonniers, whose name results from the contraction of the two vineyard sites from which its grapes originate exhibits aromas of very ripe red fruit and black currant, followed by raspberry, then licorice, with vanilla and jam at the finish.
100% of the wine is matured in oak casks for 14 to 18 months.
Hand harvested. Vinification in small, closed concrete vats. Fermentation is very long and lasts about 5 weeks.
