Maturation takes place in oak casks, of which one third is new. Several rackings permit a slow and natural clarification process. The wine is unfiltered and unfined.
The grapes ferment in open wooden vats after total destemming. Two daily treadings ensure a good extraction of the tannins. The temperature of fermentation varies between 26 and 32у.
