Nederburg’s premium wines are accommodated in The Winemasters ensemble, named to honor the long-established tradition of winemaking excellence. These classically styled, food-friendly wines with refreshing fruit flavors, elegance and finesse, treasure the integrity of the grape in every step of the wine-growing and winemaking journey. A full mouthfeel with rich fruit flavors, soft tannins and a lingering aftertaste.
After alcoholic fermentation, the wine was removed from the skins to undergo malolactic fermentation, and immediately transferred for maturation to a precisely planned combination of tanks, large oak vats and 300 liter French, American and Romanian oak barrels that included a significant percentage of new wood. Oak maturation averaged 12 months.
Grapes were harvested on taste at optimum ripeness between 23° and 25° Balling, both by hand and machine. Bunches were gently destemmed and fermented between 73°F and 77°F in vertical stainless steel tanks, open and roto-fermenters for an average of 10 days. Regular mixing of the skins extracted the maximum of color and the ripe tannins.
