After fermentation the wine was kept on the fine lees for 3 months before stabilization and bottling.
The grapes were crushed and de-stemmed and had skin contact for a few hours. The juice was then drained of the skins and settled overnight. After racking, the clean juice was cold fermented in stainless steel tanks.
